As summer is coming to a close (insert sad face here), the beauty and bounty of autumn will soon be upon us. Backyard garden harvests are plentiful and the farmers markets are exploding with freshness and variety. Recently my husband signed us up to receive a biweekly box of local organic vegetables from a nearby farm. It is SO much fun to open up the box and discover what fresh goodness is inside each delivery.
But sometimes I get a little overwhelmed with the sheer quantity of vegetables, and I wonder "how am I going to cook everything while it is all so beautifully fresh? " Have you ever felt this way?
So this morning, bright and early (because that's when I have the most energy), I decided to cook up a whole pile of veggies. I decided to adapt a few recipes I hand on hand, and came up with this delicious creamy cashew vegetable soup. Please find the recipe below. 👇🏻
